Oven-Roasted Chestnuts

This is one of our dad’s few specialties. He makes them once a year during chestnut season, when they’re readily available and cheap at the supermarkets.

These involve almost no work. Aside from cutting x’s on each chestnut, all you have to do is roast them on a cookie sheet in a 425 degree oven for about 25 minutes. That’s it! (Dad never claimed to be a gourmet chef.)

  1. I love chestnuts (and this is a huge understatement!). Sally and I make them all the time when they’re in season! Randy is actually at the supermarket right now! Chestnut tip: I don’t know if you already do this but after you cut the x’s if you soak them in cold water for like 15 minutes before roasting it helps them cook better/softer/open easier. Enjoy!
